How did it all begin?

Of course, it all begins with the top quality milk produced by our herd of Friesian Holstein Cows – all bred on our farm which overlooks the Firth of Forth in this beautiful corner of the East Neuk of Fife

Farmers, by the very nature of the job that they do, are stewards of the land and they have an almost subconscious sense of responsibility for the environment and the importance of ‘giving something back’. Skills and traditions are passed down through the generations, and each generation adds their own threads to the colourful tapestry that is the landscape we love.

I don’t, however, know anyone who left school with the ambition to be a cheesemaker – most people lead other lives and ‘fall into’ cheesemaking by accident or circumstance. Cheesemaking is one third recipe, one third manual labour (no need for gym membership if you are a cheesemaker!) and one third cleaning. These key elements, along with a generous measure of passion, contribute to a final product full of character and taste.

The development of our cheese recipes – and taking these cheeses to market – has been a brave and innovative development for our farming business. We hope that you enjoy this unique taste of Fife.

It all begins for us after a ‘crash course’ in Wales, where I stayed with Leon and Joan Downey for a week, helping to make their award winning Llangloffan Cheese. Loan showed me the basics – and who could have failed to be inspired by his enthusiasm.
